Spiced Vanilla Sugar Cookies

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon Cinnamon Powder (Ceylon)

1/2 teaspoon Allspice

1/2 teaspoon Fennel Seed Powder

1/4 teaspoon Clove Powder

1/4 teaspoon Ginger Powder

1/4 teaspoon Lavender Powder

1/4 teaspoon Anise Seed Powder

1/4 teaspoon freshly grated Whole Nutmeg

Instructions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, beating well.

In a separate bowl, whisk together the flour, baking powder, salt, and all the spices: Cinnamon Powder, Allspice, Fennel Seed Powder, Clove Powder, Ginger Powder, Lavender Powder, Anise Seed Powder, and freshly grated Whole Nutmeg.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Scoop out rounded tablespoons of cookie dough and place them on the prepared baking sheets, leaving enough space between each cookie.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Keep an eye on them to prevent over-baking. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. 

Optional: Dust the cooled cookies with a little extra Vanilla Sugar for an added touch.
